Vineyards
Produced in the Haute Vallée de l'Aude, a cooler subregion in the foothills of the Pyrenees, this Chardonnay reflects the limestone and clay soils of the area, as well as the high-altitude Mediterranean climate. The temperature variation between day and night helps retain vibrant acidity, which enhances the wine’s balanced and fresh profile.
Winemaking
The Chardonnay grapes are pressed and undergo a cold settling before fermentation at low temperatures (below 18˚C) in stainless steel, preserving the purity of fruit. Aging on fine lees, with some malolactic fermentation, adds a subtle creaminess to the wine while keeping it fresh and mineral-driven.

Brilliant yellow with greenish highlights, indicating freshness and vibrancy.

Expressive and floral, with aromas of citrus, white flowers, and a touch of fresh herbs, showcasing the wine’s mountain influences.
