Grapes: Sauvignon 100%Sight: Bright golden colour.Nose: The aromas’ complexity with mineral and the grape flavours is well balanced in the nose and in the palate.Palate: The balance between all the elements and especially alcohol and acidity is good. The wine is very elegant, complexity of fruit like peach and mineral flavours of terroir. This wine is very powerful and long after taste. General Information: Harvest by hand when the grapes are completely mature: bunches are pressed with a pneumatic press; the juice is fermented in tank with temperature control: 100 % malolactic fermentation. The wine is left on the lees during several months. Slow natural sedimentation. Food Match: It is delicious at any time, with seafood, fish or "chêvre frais" (goat cheese). We tasted the wines of Les Temps Perdus in January 2006 and we absolutely loved the wines. Clotilde Davenne is the owner and wine maker at the estate. Clotilde produced 17 vintages for the Brocard estate until she decided to make her own wines. The wines are pure no oak is used, they are very impressive and we are proud to list these wonderful wines. The Sauvignon St Bris Vieilles Vignes is produced from one hundred year old vines, a small production of this high quality wine.
