Sight: Deep ruby red Nose Full-bodied and complex, small, ripe red and black fruits, vanilla, spices, chocolate, mahogany
Palate: Full bodied, with round soft tannins, and a long-lasting final
General Information: 10-12 months in french barriques; bottle-aged for 12-14 months
Food Match: Red meats, roasted game, stews, wild game, seasoned cheeses. Highly recommended with aged, 13-month D.O.P. Ragusano cheese, Nebrodi provola cheese and pecorino. Valle dell’Acate is located near Acate in the Southeast corner of Sicily. Valle dell’Acate wines show themselves to be an authentic expression of the history and character of the land. We have chosen two wines. We feel marriage well with fish. The Insolia has great character with aroma of wild flowers and citrus fruit. The Frappato is an interesting wine bursting with fruit with a spicy aftertaste.
