Vineyard and winemaking
Saint-Véran surrounds the limestone outcrops of the southern Mâconnais, where Chardonnay ripens on clay-limestone slopes in a warm but well-ventilated setting. The soils bring a chalky firmness to the appellation's naturally generous fruit.
The vineyards are tended sustainably and the grapes are harvested by hand. Fermentation in stainless steel retains purity, while time on the lees develops a gently rounded texture and allows the wine's floral and mineral detail to come forward.
Tasting notes
Appearance
Pale gold, bright and crystalline.
Nose
White peach, pear and honeysuckle are joined by fresh hazelnut, lemon blossom and a quiet flinty note.
Palate
Dry and rounded, with peach and orchard fruit balanced by lively citrus acidity. A chalky mineral core gives the wine direction, while almond and a touch of honey add breadth to the elegant finish.
Food pairing
Serve with roast veal and thyme, chicken in a light cream sauce, hake with beurre blanc, or a spinach and ricotta soufflé. Its combination of freshness and soft texture also works well with mild goat's cheese.
Background story
Domaine de Pouilly is based in Solutré-Pouilly at the heart of the Mâconnais. Brothers Vincent and Pierre-Antoine Besson represent the family's fifth generation of winegrowers, following a line that began with their grandfather Pétrus in 1933.
The domaine covers approximately 20 hectares across numerous parcels in Pouilly-Fuissé and neighbouring appellations. Many vines are more than 50 years old, and the brothers combine sustainable cultivation with close personal oversight from vineyard to bottle. Saint-Véran is a natural part of their range, sharing the limestone landscape of neighbouring Pouilly-Fuissé while offering a distinctively floral, open and approachable expression of Chardonnay.
