Vineyards and winemaking

Górgola is made from 100% Albariño grown in Rías Baixas, around 20 kilometres from the Atlantic. Vines more than 30 years old are shaped by Galicia's cool maritime conditions, with the proximity of the sea contributing to the variety's naturally fresh, saline expression.

The 2015 was made by the traditional method, with a second fermentation in bottle followed by 26 months ageing on the lees before disgorgement in spring 2018. Finished as an Extra Brut with restrained dosage, it combines mature autolytic character with Albariño's citrus drive.

Tasting notes

Appearance

Pale lemon-gold with a fine, persistent bead and gentle mousse.

Nose

Green apple, lemon peel and white peach meet hawthorn, oyster shell and a subtle note of warm brioche.

Palate

Dry, taut and mineral, with zesty citrus and orchard fruit sharpened by brisk acidity. Fine bubbles give the wine a creamy edge, while lees ageing adds savoury depth before a long, saline finish reminiscent of sea spray.

Food pairing

Serve with Whitstable oysters, grilled langoustines, crab on sourdough, or hake with clams and parsley. Its freshness also works well with lightly salted tempura vegetables; chill to around 8°C and allow the glass to reveal its mature detail.

Background story

Cabana das Bolboretas was founded by five friends united by a passion for small-scale, artisanal wine. Górgola applies the patience of traditional-method sparkling production to Albariño, giving a familiar Galician grape an unusual and highly individual form.

Produced in limited quantities, the cuvée connects Rías Baixas' Atlantic identity with extended bottle ageing. The 2015 now offers more savoury complexity than a young sparkling Albariño while retaining the acidity and salinity that define its origin.
