Vineyards and winemaking

Rubis Brut Rosé brings together Chardonnay and Pinot Noir selected from a range of crus across Champagne. The blend is assembled to combine Chardonnay's citrus-led finesse with the red-fruit fragrance and structure of Pinot Noir, while a small proportion of still red Champagne gives the cuvée its colour and depth.

Only the first-pressing juice is used for purity, followed by the traditional second fermentation in bottle. The Champagne matures on its lees for around three years before disgorgement, developing a fine mousse and gentle savoury complexity while a restrained dosage preserves freshness.

Tasting notes

Appearance

Luminous salmon pink with copper highlights and a fine, persistent stream of bubbles.

Nose

Red cherry, blackcurrant and wild strawberry are lifted by pink grapefruit, apple blossom and a delicate note of brioche from lees ageing.

Palate

Fresh and poised, with ripe red berries carried by bright acidity and a soft, persistent mousse. Chardonnay gives the wine line and citrus clarity, while Pinot Noir brings body and a gently vinous finish of cherry, currant and fine pastry.

Food pairing

Serve as an aperitif or pair with seared tuna, salmon en croûte, roast chicken, or a red-fruit tart with restrained sweetness. Its combination of freshness and gentle body also works particularly well with duck rillettes or smoked salmon.

Background story

The house began in Épernay in 1923 as Baudry Lebrun & Cie, founded after Princess Baudry left Moscow following the Russian Revolution. Jean-Barthélémy Chancel, from a Rhône winemaking family, acquired and renamed the business in 2002, becoming the youngest Champagne négociant of his generation.

Now based in Aÿ, Louis Barthélémy works through long-standing relationships with growers across a diverse collection of crus. Rubis expresses the house's refined, low-dosage approach in rosé form, using extended lees ageing and carefully selected red wine to balance delicacy with flavour.
