Vineyards and winemaking
Le Dolci Colline is made from Glera grown in the Veneto in north-eastern Italy. The region’s temperate conditions allow the grapes to develop delicate orchard-fruit and floral aromas while retaining the bright acidity required for a lively sparkling wine.
The grapes are gently pressed and fermented at a controlled temperature in stainless steel. A second fermentation in pressurised tanks creates the wine’s fine bubbles while preserving Glera’s fresh, fruit-led character. Bottled as a Brut, it is clean and crisp rather than overtly sweet.
Tasting notes
Appearance
Pale straw yellow with bright clarity and a fine, persistent mousse.
Nose
Green apple and fresh pear are lifted by lemon peel and a light scent of white flowers.
Palate
Light, delicate and lively, with ripe orchard fruit, subtle grapey notes and zesty acidity. The bubbles are soft and well integrated, leading to a clean, refreshing citrus finish.
Food pairing
Serve as an aperitif or with smoked-salmon blinis, tempura vegetables, prawn cocktail or goat’s-cheese crostini. Its fresh acidity and gentle mousse also work neatly with lightly salted antipasti.
Background story
Le Dolci Colline means “the sweet hills”, a name that evokes the rolling vineyard landscape of the Veneto. The wine offers a straightforward introduction to the region’s best-known sparkling style, placing freshness and ease of enjoyment at the centre.
Adria Vini’s restrained approach keeps the emphasis on Glera rather than winemaking weight. The result is an accessible, versatile Prosecco designed for uncomplicated drinking, whether poured on its own or at the beginning of a meal.
