Production process
El Gaitero Sidra de Hielo is produced using a specialised cryoconcentration method, which intensifies the natural sugars and flavours of the apples. Only the finest Asturian apples are selected, harvested at peak ripeness to ensure maximum expression. The apples are then partially frozen before pressing, concentrating the juice before a slow, controlled fermentation. This process enhances the balance between sweetness and acidity, resulting in a cider of remarkable depth and complexity. After fermentation, the cider is aged to develop additional richness and character before bottling.
