Vineyards
This Merlot and Cabernet Sauvignon blend showcases two varieties rarely found in English viticulture due to the cool climate. To achieve optimal ripeness, the vines were grown in greenhouses in Cornwall, which allowed for controlled warmth and robust ripening, enabling the fruit to reach full maturity.
Winemaking
Each variety was fermented separately, with regular punch-downs enhancing colour, flavour, and tannin extraction. After pressing, about one-third of the wine aged in new French oak barrels, while the rest matured in stainless steel tanks. This combination imparted subtle oak influence alongside bright fruit character. Following malolactic fermentation, the wine aged for 10 months before bottling.

The aromatic profile features rich notes of plum, cherry, black pepper, and warming spices, creating a complex bouquet.
Palate
Full-bodied and well-rounded, this wine has pronounced fruit intensity with red fruit flavours and hints of spice. The oak aging contributes a touch of sweetness, adding depth and structure to this multi-layered wine, with a smooth, lingering finish.
