Tasting Note
The 2015 vintage of Domaine Alain Chavy’s Puligny-Montrachet 1er Cru Les Pucelles opens with inviting aromas of ripe peach, lemon zest, and delicate floral notes, underscored by a stony minerality. On the palate, it delivers a refined richness, balanced with vibrant citrus and orchard fruit flavours. The wine’s natural acidity is complemented by a subtle creaminess, giving way to a lengthy, mineral-driven finish. This vintage captures the hallmark elegance and complexity of Les Pucelles, with fine structure and a lasting impression of purity and finesse.
Production
This Puligny-Montrachet is made from carefully selected Chardonnay grapes from the prestigious Les Pucelles vineyard, known for its limestone-rich soils which impart distinct minerality. Alain Chavy uses a restrained approach to oak aging, with approximately 20-25% new barrels, allowing the vineyard's character to shine without overshadowing it. The wine undergoes gentle pressing and a long aging period, resulting in a layered complexity and a balanced integration of oak that enhances its structure and texture.
Food Pairing
The 2015 Puligny-Montrachet Les Pucelles pairs beautifully with rich seafood, such as butter-poached lobster or Dover sole with a lemon-butter sauce. It’s also a fine match for creamy poultry dishes, like roasted chicken with a tarragon cream, or soft cheeses such as Brie and Comté, which highlight the wine’s depth and elegance. For a refined pairing, try it with risotto or a delicate pasta with white truffle, both of which elevate the wine's mineral and fruit profile.
