Vineyards and winemaking
This Gewurztraminer comes from organically farmed parcels around Hunawihr, where clay and limestone soils give the variety both richness and definition. The fruit is hand-harvested, reflecting Domaine Mader’s exacting approach to vineyard selection and naturally low yields.
Whole bunches are pressed gently before a slow fermentation with indigenous yeasts. The wine rests on its fine lees in stainless steel, preserving its perfume while allowing the rounded, gently sweet character of the 2020 vintage to settle into balance.

Appearance
Bright gold with a clear, polished sheen.
Nose
Rose petal and lychee rise from the glass, followed by ripe peach, mango, orange peel and a faint smoky spice.
Palate
Generous and silky, with exotic fruit and crystallised ginger carried by a line of fresh acidity. A measured sweetness broadens the middle palate without becoming heavy, and the finish is long, floral and lightly spiced.
Food pairing
Try it with Korean-style fried chicken, roast pork with apple and five spice, a mild Thai red curry, or a washed-rind cheese such as Munster. Its aromatic lift also works well with an apricot and almond tart that is not overly sweet.
Background story
Jean-Luc and Anne Mader established the domaine in Hunawihr in 1981. Their son Jérôme took charge in 2005 and converted the vineyards to certified organic farming, achieving certification in 2007. Today the family works just over ten hectares, including distinguished holdings in Rosacker and Schlossberg.
Domaine Mader came to Sommelier’s Choice on the recommendation of Alsace-born Master Sommelier Eric Zweibel, who trained under Gérard Basset MS MW. That introduction reflects what continues to make these wines compelling: precise, vineyard-led expressions of Alsace with freshness at the heart of even the richer varieties.
