Vineyards and winemaking

Gregoris is made from 100% Pinot Grigio grown in hillside vineyards in the Alpone valley, where elevations range from around 150 to 450 metres. The mixture of basaltic and clay-rich soils, together with the cooling influence of altitude, helps the grapes develop ripe orchard-fruit character while retaining freshness.

The grapes are harvested by hand, gently pressed and fermented at a controlled temperature in stainless steel. Maturation in tank protects the wine’s aromatic purity and supple texture, allowing the variety’s pear, apple and citrus notes to remain at the forefront.

Appearance

Pale straw yellow with bright clarity and a faint green reflection.

Nose

Fresh pear and white peach are joined by apple blossom, lemon zest and a subtle note of almond skin.

Palate

Dry and harmonious, with ripe pear and crisp apple at the centre. Gentle acidity gives the wine lift, while a soft, rounded texture adds breadth without heaviness. The finish is clean and quietly savoury, with citrus and a delicate mineral note.

Food pairing

A versatile choice for smoked trout pâté, a warm chicken and tarragon salad, linguine with courgette and lemon, or tempura prawns. It also works well as an aperitif when a softer, more rounded white is preferred.

Background story

The name Gregoris comes from the maiden name of Antonio Fattori’s mother, linking the wine directly to the family’s history. The vineyards associated with the family have roots reaching back to the nineteenth century, and the name gives this approachable Pinot Grigio a personal identity.

Rather than pursuing a neutral style, Fattori gives the variety enough vineyard character and careful handling to show fragrance, body and balance. The 2025 vintage remains immediately accessible while retaining the poised, understated character expected of the estate.
