Vineyards and winemaking
Recioto della Valpolicella Classico is crafted from the outer portions of grape clusters, known as the "recie," which receive the most sunlight and therefore attain optimal ripeness. The blend consists of 65% Corvina, 20% Rondinella, and 5% Molinara, along with other indigenous old vines. The grapes undergo the appassimento process similar to Amarone, with the initial half of the "recie" pressed in January, and fermentation initiated by heating the juice to a constant temperature of 10°C. In early March, the remaining grapes, rich in natural sugars, are pressed, and their juice is added to the fermenting batch. This traditional method enhances the unique aromas and flavours of the grapes. The fermentation is stopped at 12-13% alcohol, leaving a residual sugar of no less than 10%. Aging takes place in a mix of old and new wood, followed by several months in the bottle before the wine is released.

Dark ruby red, showcasing the wine’s richness and depth.
Nose
The bouquet is extremely complex, offering a delightful mix of berries, cherry jam, and plums, complemented by mild spice notes, including liquorice, cinnamon, vanilla, and chocolate. In its younger phase, the wine also exhibits characteristic floral scents, such as violets and wildflowers.
Palate
On the palate, Recioto della Valpolicella Classico is sweet and silky, with a delicate and harmonious profile that reflects its complex aromas.
Food pairing
This wine pairs beautifully with baked desserts, particularly those with minimal cream, like the traditional Panettone and Pandoro of Verona, as well as biscotti, pies, and shortbreads. It is also delicious alongside chocolate desserts and is recommended as an after-dinner drink.
Background story
Corteforte, established in 1989 by Carlo Maria Cerutti, is located in the historically significant Fumane valley, north of Verona. The estate originated in the early 1400s as a fortified structure with four towers, evolving over time into a noble residence that now features a boutique hotel, restaurant, and winery, all surrounded by 3 hectares of premium vineyard plots.
No expense was spared in creating Corteforte. The winery employs organic and sustainable practices and boasts a vast underground storage area for extensive bottle aging, despite its modest annual production of around 20,000 bottles. The estate features a variety of barrel sizes and a wide range of winemaking techniques that focus on the dried grape process. Critics regard Corteforte as a jewel in the crown of the Amarone region, but the true essence of its wines lies in their authenticity, finesse, and character. From the impressive Valpolicella Ripasso to the exemplary single vineyard Amarones, Corteforte continues to set a high standard for excellence in the Amarone region.
