Le Dolci Colline Prosecco DOC Brut NV is sourced from hillside vineyards in the Veneto region of northern Italy. The vines benefit from well-drained soils and a temperate climate, which contribute to the vibrant acidity and fresh fruit character of the wine. Sustainable vineyard practices ensure a pure expression of the Glera grape, the principal variety used in Prosecco production.
Winemaking
Made exclusively from Glera, the grapes are gently pressed in stainless steel before undergoing temperature-controlled fermentation to preserve their delicate aromatics. The secondary fermentation follows the Charmat method, where the wine develops its fine bubbles in pressurised tanks, enhancing its freshness and lively character. The result is a crisp, fruit-forward Prosecco with refined, persistent mousse.
