Grape: Merlot, Cabernet Sauvignon
A garnet coloured wine, aromas of plums, cherry, pepper and spice. The palate is full bodied and well rounded, with good fruit intensity and tannins. Again, there are flavours dominated by red fruit and spice and a sweetness extracted from the oak. A robust, multi-layered wine, suitable for a range of hearty foods. Serve at 16-18 degrees.
Two varietals you don’t typically associate with English viticulture. Due to English cool climate, these vines were grown in greenhouses, where superb ripeness was achieved. Both varietals were fermented separately with regular punch downs performed to aid extraction [for body, colour, flavour and tannins]. After pressing, a third of the blend was transferred to new French oak barrels and the remainder, into stainless steel tank. The wine underwent malolactic fermentation, followed by 10 months ageing before being bottled.
