“Rustico” has been part of the beating heart of Sommelier’s Choice since we started the business in in 1999 and indeed was part of our initial inspiration. This cuvée helped define the quality of “pouring” Prosecco decades ago and it remains one of the benchmarks to this day, admired by journalists, wine critics and enthusiasts around the world. The perfect apéritif.
Terroir
Grapes grown in some of the best sites in Valdobbiadene, sourcing from their own vineyards and from long-term collaboration with partner growers, all practicing organic principles.
Producer profile
Established in 1919 and today spearheaded by Primo Franco who took over in the early 1980’s, pushing forward a quality agenda and viticultural excellence through new planting techniques and the use of old clones. The pioneering spirit led to single vineyards, including the only walled vineyard in Valdobbiadene.
Vinification
Great Prosecco starts with great wine according to Primo Franco, and we certainly don’t disagree! The base wines are vinified in temperature controlled stainless steel tanks, and the secondary fermentation takes place in autoclaves using the Charmat method. A low dosage is used to retain the maximum expression of the wine.
Tasting notes
brilliant straw yellow. The nose reveals typical aromas of fruit and flowers, including William’s pear and white flowers, with some refreshing zestiness. In the mouth it is soft with a delicate, creamy texture and long finish.
Food pairings
The perfect apéritif. Also a great accompaniment to cicchetti and other appetisers.
