Vineyards

The estate's extensive vineyards are predominantly planted with Cabernet Sauvignon, complemented by Merlot and Petit Verdot. The vines thrive in gravelly soils, which provide excellent drainage and contribute to the wine's structure and complexity. The vineyard's proximity to the Gironde estuary moderates temperatures, promoting even ripening of the grapes.

Winemaking

The 1978 vintage was vinified using traditional methods. Fermentation took place in large wooden or concrete vats, reflecting the practices typical of Bordeaux in the late 20th century. The wine was aged in French oak barrels for 16 to 18 months, with a proportion of new oak, imparting subtle oak nuances while preserving the wine's inherent character.

Appearance

The wine presents a deep ruby colour with garnet reflections, indicative of its maturity and depth.

Nose

Aromas of ripe red and black fruits, such as cherries and blackberries, are prominent, accompanied by notes of cedar, tobacco, and a hint of earthiness, reflecting its Pauillac origin.

Palate

Medium-bodied with a focus on dark fruit flavours, the palate is complemented by nuances of spice and a touch of minerality. The wine is well-structured, offering a balanced experience with a smooth finish.

Food Pairing

Château Talbot 1978 pairs well with classic meat dishes such as veal, pork, beef, lamb, duck, and game. It also complements roasted, braised, and grilled dishes, as well as hearty fish courses like tuna, mushrooms, pasta, and a variety of cheeses.

Background story

Château Talbot is one of the oldest estates in Bordeaux, dating back to the 15th century. The estate is named after Sir John Talbot, the Earl of Shrewsbury, who was the Governor of Aquitaine and a prominent English military commander. In 1917, the estate was acquired by Désiré Cordier, and it has remained under the stewardship of the Cordier family ever since. Today, Château Talbot is managed by the fourth generation of the Cordier family, who continue to uphold the estate's tradition of producing high-quality wines that embody the elegance and complexity of Saint-Julien.
