Vineyards

The Chardonnay grapes for Vallet Frères Corton-Charlemagne Grand Cru 2021 are sourced from the esteemed Grand Cru vineyards of Corton-Charlemagne in the Côte de Beaune, Burgundy. These vineyards, with vines averaging 15 years of age, are situated on limestone-rich soils at altitudes between 300 and 350 metres. The east-facing slopes and unique microclimate provide optimal conditions for cultivating Chardonnay, imparting the wine with its characteristic minerality and elegance.

Winemaking

Vallet Frères employs ultra-traditional winemaking techniques. After hand-harvesting, the grapes are gently pressed, and the juice is decanted before fermenting in open wooden casks using only natural yeasts, without temperature control. The wine remains on its lees for an extended period to enhance complexity and texture. It is then matured in French oak barrels for a minimum of two years, with periodic racking to remove natural deposits. Bottling is conducted without filtration, using gravity to transfer the wine directly from barrel to bottle, ensuring purity and authenticity.

A complex bouquet of chamomile and butterscotch, complemented by mineral notes and a hint of oak.

Palate

The palate is impressively structured, with flavours of ripe pear, citrus zest, and subtle spice. The oak influence is well-integrated, providing depth without overshadowing the fruit. A fine mineral backbone and balanced acidity lead to a clean, lingering finish.

Food pairing

This Grand Cru pairs beautifully with simply grilled lobster, snails in herb butter, or pike dumplings in a sorrel sauce. Its richness also complements poultry in creamy sauces and mature cheeses.
