Vineyards

Sourced from the estate’s vineyards in the North Downs of Kent, England, where chalky soils mirror those found in the Champagne region. The vineyards benefit from a temperate maritime climate and south-facing slopes, ensuring optimal sun exposure and slow ripening, which enhances the aromatic complexity and freshness of the grapes.

Winemaking

The Chardonnay grapes were hand-harvested in October 2019. Whole-bunch pressing was employed to gently extract the juice, followed by fermentation in temperature-controlled stainless steel tanks to preserve the purity of fruit. A portion (20%) of the wine was aged in French oak barrels for added complexity. The wine underwent secondary fermentation in the bottle and was aged on lees for 36 months, developing depth and a fine mousse. Disgorgement took place in January 2023.

The entire process follows the traditional method, with meticulous attention to detail at every stage to create a sparkling wine of elegance and precision.

Appearance

Pale gold with fine, persistent bubbles.

Nose

Elegant and expressive, the nose reveals aromas of citrus fruits, green apple, and white flowers, complemented by subtle notes of toasted brioche and minerality.

Palate

The palate is fresh and vibrant, with flavours of lemon zest, crisp green apple, and a hint of almond. A creamy texture from the lees aging is balanced by a bright, clean acidity, leading to a long, mineral-driven finish with a touch of salinity.

Food pairing

This Blanc de Blancs pairs beautifully with oysters, grilled seafood, and creamy cheeses. It also complements light poultry dishes and citrus-based salads.

Founded in 2012 by Charles and Ruth Simpson, Simpsons Wine Estate has quickly become one of England’s premier producers of sparkling and still wines. Located in the village of Barham near Canterbury, the estate spans 30 hectares of vineyards planted on ancient chalk soils.
