Vineyards
Nuits-Saint-Georges Les Roncières 2016 is made from one of Domaine Robert Chevillon’s premier cru vineyard sites, located in the heart of Burgundy’s Côte de Nuits. The Les Roncières vineyard is known for its stony, limestone-rich soils, which provide excellent drainage and impart minerality to the wine. The vines average 40 years in age, yielding low quantities of concentrated fruit that reflect the unique terroir. Sustainable viticulture practices are rigorously followed to preserve the health of the vines and surrounding ecosystem.
Winemaking
The grapes are hand-harvested at optimal ripeness and carefully sorted to ensure only the highest quality fruit is used. Fermentation takes place in temperature-controlled stainless steel tanks using wild yeasts, preserving the purity and character of the Pinot Noir. Gentle extraction methods, such as punch-downs and pump-overs, are employed to enhance colour and tannin integration. The wine is aged for 18 months in French oak barrels, 25% of which are new, contributing depth and complexity.

The nose is elegant and expressive, offering aromas of ripe red cherries, raspberries, and wild strawberries, layered with notes of violet, forest floor, and subtle spice from the oak.

On the palate, this wine is medium-bodied and refined, with silky tannins and a vibrant acidity. Flavours of red berries, pomegranate, and hints of truffle are complemented by a touch of cinnamon and earthiness. The finish is long and nuanced, with lingering minerality and floral undertones.
