Vineyards
This vermouth is crafted at Knightor Winery using grapes grown along the Cornish coast, known for a unique, cool climate that enhances the freshness and acidity of the wines used as a base for the vermouth.
Winemaking
Knightor White Vermouth is made with a blend of 24 botanicals, including herbs like wormwood, sage, and oregano, many of which are hand-harvested from the area surrounding the winery. These botanicals are first infused in a fruity eau-de-vie distilled from Knightor’s own grape skins. After a short period, the infusion is blended with a reserve base wine and allowed to integrate for a smooth and complex finish.
Appearance
Bright and clear, with a light yellow hue.
Nose
The nose is aromatic and multi-layered, featuring vibrant citrus, mint, and fresh sage aromas that leap from the glass, offering a complex and alluring profile.
Palate
This vermouth is subtly sweet with a gentle bitterness, balanced by notes of citrus, rosemary, and mint. It finishes with a pleasant herbal complexity, making it ideal as an aperitif.
Serving Suggestions
Enjoy it over ice or in a classic Cornish Spritz with soda water and a slice of lemon, enhancing the crispness and botanical richness.
