Vineyards
Château Sigalas Rabaud 2003 is produced from the estate’s exceptional vineyards, classified as a Premier Cru Classé in the 1855 classification. They span 14 hectares and are planted on gravelly soils over a limestone sublayer, ideal for promoting botrytis cinerea (noble rot). The estate’s location near the Ciron and Garonne rivers provides the humid conditions essential for the development of noble rot, which concentrates the sugars and flavours in the grapes.
Winemaking
The 2003 vintage, characterised by a warm growing season, yielded exceptionally ripe and concentrated fruit. The grapes, primarily Sémillon with a smaller proportion of Sauvignon Blanc, were meticulously hand-harvested in multiple passes to select only the berries affected by noble rot. Fermentation took place in French oak barrels, followed by ageing for 18 to 24 months in barrels, 40% of which were new. This process enhances the wine’s complexity and structure while maintaining its signature freshness.
Appearance

Nose
The nose is opulent and expressive, offering aromas of apricot, dried mango, and candied orange peel, interwoven with notes of honey, almond, and a hint of vanilla.
Palate
The palate is is luscious and full-bodied, with flavours of ripe stone fruits, honeycomb, and toffee. A vibrant acidity balances the sweetness, leading to a long, harmonious finish with nuances of spice and toasted nuts.
Food pairing
This wine pairs beautifully with foie gras, blue cheeses such as Roquefort, or fruit-based desserts like tarte Tatin. It is also an excellent choice as a dessert in itself, sipped slowly and savoured.
