Vineyards

The Chevalier-Montrachet Grand Cru vineyard is one of the most esteemed sites in Burgundy, located above the famed Montrachet. It is celebrated for its thin, chalky soils that provide excellent drainage and allow vines to struggle, resulting in concentrated fruit.  The vineyard benefits from its high altitude and eastern exposure, allowing for slower ripening and preserving acidity.

Winemaking

The grapes are hand-harvested and sorted meticulously to ensure only the finest fruit is selected. Fermentation occurs with indigenous yeasts in temperature-controlled stainless steel tanks. The wine is then aged for 18 months in French oak barrels, approximately 30% of which are new. The extended aging process enhances the wine's depth, texture, and integration of oak, while preserving its hallmark freshness and minerality.

Appearance

Pale gold with green reflections, indicating its youth and vibrancy.

Nose

The nose is expressive and refined, offering aromas of white flowers, citrus peel, and orchard fruits, intertwined with flinty minerality and subtle hints of toasted almond and vanilla from the oak.

Palate

On the palate, this Grand Cru delivers exceptional balance and precision. Flavours of ripe pear, lemon curd, and green apple are complemented by a creamy texture and a backbone of racy acidity. The wine’s layered complexity reveals nuances of hazelnut and wet stone, leading to a long, elegant finish with remarkable finesse.

Food Pairing

Perfectly suited to dishes that match its elegance, such as lobster thermidor, roasted turbot with beurre blanc, or creamy risotto with white truffle. Its structure and depth also make it an exquisite pairing with aged Comté cheese.
