Vineyards
El Truc is crafted from the Suriol family’s historic vineyards at “Castell de Grabuac” in Penedès, which have been organically certified since 1996. The vineyards, situated at 280 metres with gently sloping clay-limestone soils, embody centuries of winemaking tradition and benefit from the Mediterranean climate. Managed under biodynamic principles, the vineyard's deep, carbonate-rich soils allow Macabeu grapes to develop structure and a mineral quality unique to the terroir.
Winemaking
The 2013 harvest, influenced by a cool winter and warm, contrasting seasons, began on September 10. Grapes were gently pressed, with both primary and malolactic fermentations occurring in underground vats using indigenous yeasts. Aged for over 60 months on its lees in the bottle, this Cava is a Brut Nature with no dosage, ensuring a pure expression of Macabeu’s character. It also spent an initial four months aging in local chestnut barrels, adding complexity and depth.
Appearance
Pale yellow with fine, persistent bubbles, reflecting the Cava’s long aging.
Nose
El Truc reveals intense aromas of citrus, green apple, and subtle herbal notes, complemented by a hint of chestnut from the oak aging.
Palate
This Cava is fresh and light, with flavours of lemon zest, orchard fruits, and a touch of minerality. Integrated acidity and fine carbonation create a persistent, elegant finish.

Background
With a winemaking history dating back to 1624, Cellers de Can Suriol is managed by the 14th generation of the Suriol family. Their 30 hectares of organic vineyards, divided into over 25 micro-plots, are cultivated sustainably, honouring the heritage and biodiversity of Penedès. Cava Macabeu "El Truc" 2013 exemplifies this commitment, offering a unique expression of the region’s traditional winemaking practices.
