Vineyards

The vineyards of Cantina Terlano are situated in the mountainous region of Alto Adige, where steep, high-altitude slopes, mineral-rich volcanic porphyry soils, and a unique Alpine-Mediterranean climate create the ideal conditions for the slow ripening of grapes. The 1991 vintage benefited from a long growing season, ensuring excellent concentration and balance. Cantina Terlano, a cooperative founded in 1893, works with 143 growers who farm 190 hectares of vineyards, preserving traditional techniques while embracing long-term ageing practices that make their wines stand apart.

Winemaking

This wine is the result of an extraordinary winemaking philosophy. Aged for 24 years on lees in large stainless steel vats at controlled cold temperatures, the wine developed remarkable complexity, richness, and freshness. The lees contact enhances depth while preserving the vibrant character of the wine. After bottling, it matured further before release, ensuring exceptional integration of its structural elements. The blend is typical of Terlaner "Rarity" wines, comprising of 60% Pinot Bianco, 30% Chardonnay, and 10% Sauvignon Blanc, adding layers of aromatic complexity, texture, and minerality.

Appearance

A luminous straw colour, with remarkable clarity and vibrancy despite its age.

Nose

Highly expressive, with aromas of crushed seashells, lemon zest, ripe apple, and a briny undertone. Hints of flint, gunpowder, and delicate floral notes add further dimension.

Palate

Medium-bodied yet intensely structured, with fresh, zesty acidity that highlights its clean and vivid fruit profile. Citrus and orchard fruits are complemented by mineral nuances and a long, saline finish. The texture is refined, with layers of complexity built through decades of lees ageing.

Food pairing

This rare and finely aged white pairs beautifully with sophisticated seafood dishes such as langoustines, turbot, and oysters. It also complements delicate risottos, Alpine cheeses, and dishes with a creamy texture, which balance its bright acidity and rich minerality.

Background story

Cantina Terlano has long been a pioneer of extended lees ageing, pushing the boundaries of what is possible in white winemaking. The 'Rarity' range represents their most ambitious expression of this philosophy, ageing wines for decades in 2,500-litre stainless steel vats deep in the winery’s historic cellars. This unique process mimics bottle ageing on a large scale, allowing the wines to evolve while maintaining remarkable freshness.
