Vineyards
Sourced from organically grown vines in the Oltrepò Pavese region of Lombardia, Italy, the Pinot Nero vines for Della Quercia are cultivated on south- and southeast-facing slopes at approximately 250 metres above sea level. The soils here are a mix of chalk, clay, and silt, enhancing the wine’s complexity and mineral character. All grapes are hand-harvested, ensuring high-quality selection.
Winemaking
Following a traditional approach, the grapes are macerated on skins for 8-10 days before malolactic fermentation in stainless steel. The wine is matured with 75% in stainless steel tanks and the remaining 25% in second- and third-use French oak barrels for six months, creating a balanced profile that preserves the fresh fruit character while adding subtle complexity.
