Named after the second of Nathalie and Benoit's three daughters. Finesse, liveliness, and elegance.
Vineyards
The vineyards of the Massif de Saint-Thierry are renowned for their unique soils, composed of ancient shell-rich sands that once lay beneath an ancient sea. This terroir provides the Chardonnay grapes with a distinctive minerality and vivacity, creating a wine of exceptional freshness and finesse.
Winemaking
The Cuvée Julie is crafted from the best first press Chardonnay juices, undergoing fermentation in temperature-controlled stainless-steel tanks to preserve its fresh and vibrant character. Malolactic fermentation is performed to soften the acidity, followed by 7 months of aging before bottling. The wine is then aged on its lees for at least 3 years, allowing it to develop depth and complexity. With a dosage of 6.75g/l, this Brut Champagne strikes a perfect balance between richness and freshness.
Appearance
A brilliant golden hue with fine, persistent bubbles forming a delicate cordon, reflective of its extended lees aging.
Nose
The nose reveals a powerful yet refined bouquet, driven by citrus notes such as lemon and grapefruit, intertwined with subtle hints of minerality that are characteristic of the sandy terroir. A touch of white flowers and fresh-baked bread adds to the complexity.
Palate
On the palate, Cuvée Julie is ample and precise, with ripe citrus flavours, particularly lemon and lime, leading the charge. The wine's creamy texture is balanced by vibrant acidity, giving it both richness and tension. The finish reveals a pleasant, noble bitterness of citrus zest, adding to its refreshing and lively nature.
Food pairing
Seared scallops in brown butter, soft cheeses, sushi, light poultry dishes, an apéritif.
