Vineyards
Domaine Guyon-Barillot’s 40-70-year-old vines are rooted in the limestone and flint soils of Pouilly-Fumé, Loire Valley. This terroir imparts the hallmark minerality and aromatic depth for which Pouilly-Fumé is renowned, allowing the Sauvignon Blanc grape to thrive with vibrant acidity and a refined, mineral-driven profile.
Winemaking
The wine is vinified in temperature-controlled stainless-steel tanks, with fermentation progressing between 15°C and 20°C to preserve and enhance its aromatics. After a first racking, the wine is carefully filtered and bottled from early spring to late summer, capturing the purity and freshness of the 2022 vintage.
Appearance
A brilliant, pale golden yellow with a subtle green tint; limpid and bright.
Nose
Aromas of citrus fruits, such as lemon and grapefruit, mingle with redcurrant, bush peach, passion fruit, lychee, and melon. Floral hints of acacia, lily, and cherry blossom add complexity, alongside gentle notes of hazelnut and quince.
Palate
Mineral and finely balanced, this Pouilly-Fumé offers a lively and clear-cut profile. A tender initial attack develops into a rounded, subtle richness, with harmonious acidity gradually emerging. Flinty mineral notes and vibrant fruit are beautifully interwoven, leaving a refined, lingering finish.
Food pairing
An ideal match for grilled or roasted fish, white meats with cream or lemon sauce, and goat cheese. It also shines as an apéritif, highlighting its freshness and elegance.

Established in 1770, Domaine Guyon-Barillot is a historic family estate nestled in the heart of Pouilly-Fumé, Loire Valley, encompassing 11 hectares of old vines, some up to 70 years in age. This remarkable terroir, rich in limestone and flint (silex), imparts the distinct minerality and aromatic precision that define the estate's wines. As an early pioneer of modern vinification, Domaine Guyon-Barillot was among the first in the region to adopt temperature-controlled stainless-steel vats. Today, they incorporate egg-shaped tanks into select blends, enhancing the wine’s aromatic complexity and finesse.
For decades, Fréderic Barillot and his wife, Elizabeth, have nurtured the estate, carefully regrouping ancestral land and modernising its facilities while preserving the family values that have guided the domaine for over 250 years.
