Vineyards
Aloxe-Corton Les Fournières 2005 is sourced from Domaine Tollot-Beaut’s premier cru vineyard in the heart of Burgundy’s Côte de Beaune. The Les Fournières vineyard features limestone-rich soils with a mix of clay, providing excellent drainage and contributing to the wine’s signature minerality and structure. The vines, averaging 40 years in age, are cultivated using sustainable viticulture practices to preserve the health of the land and ensure high-quality fruit.
Winemaking
The 2005 vintage benefited from an exceptional growing season, with warm days and cool nights promoting balanced ripening. The grapes were hand-harvested and rigorously sorted to ensure only the finest fruit was used. Fermentation occurred in open-top stainless steel tanks with natural yeasts, followed by gentle extraction through punch-downs. The wine was aged for 16 months in French oak barrels, 30% of which were new, adding depth and complexity.
Appearance
Deep ruby red with garnet highlights, reflecting its maturity.
Nose
The nose is expressive and refined, offering aromas of black cherry, redcurrant, and raspberry, layered with notes of earth, truffle, and a touch of spice.
Palate
On the palate, this wine is medium-bodied and well-structured, with silky tannins and vibrant acidity. Flavours of ripe red fruits, cranberries, and a hint of liquorice are complemented by subtle oak nuances and a mineral finish. The wine’s balance and finesse make it an excellent representation of Aloxe-Corton’s terroir.
Food pairing
This wine pairs beautifully with roasted duck, lamb chops, or coq au vin. It also complements earthy dishes like wild mushroom risotto or soft cheeses such as Brie and Reblochon.
