Winemaking

A lacklustre summer created ideal growing conditions for the vines, leading to an early harvest with low to moderate yields and small berry size. The gravity flow winery allowed for gentle destemming directly into open-top fermenters, avoiding pumping to preserve the fruit's integrity. Fermentation was traditional, with a moderately long maceration on skins to extract colour and tannins. The wine was aged for 11 months in French oak barrels from renowned Burgundian coopers, adding depth and complexity.
