Vineyards
From sustainable vineyards in Valdobbiadene and surronding areas, benefiting from a Mediterranean climate with cool influences, contributing to the wine’s freshness and aromatic complexity.
Winemaking
This rosé Prosecco blend of 85% Glera and 15% Cabernet Sauvignon is made using the Charmat method, where the wine undergoes a secondary fermentation in stainless steel tanks. This technique preserves the fresh fruit and floral notes typical of the grapes, allowing for a light, lively perlage. With a residual sugar level around 10g/L, it achieves a balanced, semi-dry profile ideal for pairing.
Appearance
A delicate rose petal hue with a fine, persistent perlage.
Nose
Aromas of strawberry, pear, and apple mingle with hints of red fruits and wildflowers, creating a fragrant and inviting bouquet.
Palate
Light-bodied and fresh, with flavours of soft fruits like white peach and pear. The palate is balanced by a subtle almond nuance, offering a crisp, refreshing finish.
Food pairing
Perfect as an aperitif or paired with lighter dishes such salads or mild cheeses. Its approachable sweetness also complements fruit-based desserts.
Background story
Il Follo, founded in 1960 in the village of Valdobbiadene, remains a family-owned winery now managed by the second-generation Follador family. The family name itself, originating from the Veneto term for “grape pressing,” speaks to their winemaking heritage. Today, they own 10 hectares of vineyards and follow rigorous viticulture practices, ensuring wines of fine perlage and delicate aromas. Their ancient farmhouse, now converted into a boutique inn, offers panoramic views of this historic wine region, embodying their commitment to Valdobbiadene’s tradition and quality.
