Vineyards
The Hunting Hill vineyard, perched on elevated, north-facing slopes, is known for producing elegant, mineral-driven Chardonnays. The clay-rich soils and cooling sea breezes create ideal conditions for slow ripening, enhancing the wine’s complexity and balance.
Winemaking
Hand-harvested grapes were whole-bunch pressed and fermented in French oak barrels using wild yeasts. The wine was aged on lees for 11 months, with bâtonnage performed to enhance mouthfeel and integration.
Appearance
Pale gold with brilliant clarity.
Nose
Expressive aromas of citrus blossom, white peach, and crushed stones, with hints of toasted hazelnut and subtle oak spice.
Palate
Refined and precise, the palate reveals flavours of lemon curd, green apple, and flint. A crisp acidity and chalky texture lead to a persistent, mineral-laden finish.

This Chardonnay pairs wonderfully with shellfish, goat’s cheese salads, or lightly spiced dishes.
