Vineyards
Parellada "Can Peritxó" is produced from organically grown Parellada grapes sourced from the high-altitude Can Peritxó vineyard in Penedès, positioned at 700 metres above sea level. This vineyard is surrounded by the Pontons forest, which provides a unique microclimate that enhances the wine's character. The vines thrive in shallow, well-drained clay-limestone soils, managed sustainably under biodynamic practices, which bring out Mediterranean freshness and complexity in the wine.
Winemaking
The grapes are hand-harvested and fermented with native yeasts, undergoing a gentle maceration on skins for a short period to add depth and texture. Fermentation takes place in underground cement tanks, naturally controlling temperature and ensuring purity. The wine is aged in large chestnut barrels for additional complexity, giving Parellada "Can Peritxó" its distinctive, nuanced character.
