Vineyards
This Champagne is produced from the Gremillet family’s vineyards near Troyes, in the southern part of the Champagne region. The vines are planted on Kimmeridgian clay-limestone soils, known for imparting a distinct minerality to the wines. This unique terroir, combined with the area’s warmer southern location, allows for greater grape ripeness, which enhances the Champagne’s fruit richness and balance. The vineyard is certified HVE Level 3, showcasing a commitment to sustainable practices.
Winemaking
Crafted primarily from 70% Pinot Noir and 30% Chardonnay, this non-vintage Champagne undergoes traditional vinification with extended lees ageing for 18 months, adding depth and complexity to its profile. The grapes are hand-harvested, and fermentation occurs in temperature-controlled stainless steel tanks to preserve the vibrant fruit character. The final blend is aged further in the bottle, allowing the flavours to develop fully, while the fine bubbles and texture result from the careful secondary fermentation.
Appearance
Bright golden with a fine, persistent mousse, indicative of quality and prolonged lees contact.
Nose
An expressive bouquet, with fresh floral notes accompanied by aromas of sweet brioche, peach skin, and baked biscuit. Hints of toasty yeast bring an additional layer of complexity.
Palate
Lively and balanced, the palate showcases ripe citrus, peach, and delicate pastry notes. The wine’s crisp acidity is harmonised with fine bubbles, leading to a clean, refreshing finish. The 18 months of lees ageing adds texture and length, making it well-suited for a range of occasions.
Food pairing
Ideal with light starters, seafood dishes, and elegant appetisers. Its freshness and complexity also make it a wonderful aperitif.
Background story
Founded by Jean-Michel Gremillet in 1979 after inheriting a plot of vines from his mother, Lulu, the estate has expanded under the care of Jean-Christophe Gremillet. Positioned 45 kilometres from Troyes, the Gremillet family has dedicated their vineyards to producing refined, quality Champagnes. This wine is used as the "House Champagne" in French Embassies around the world, hence the name.
