Vineyards
The Meunier grapes are sourced from the Vallée de la Marne, known for contributing body and structure, while the Chardonnay hails from the Massif de Saint-Thierry, adding finesse and freshness. The combined maritime and limestone influences of these terroirs result in grapes that express the power of Meunier alongside the minerality and elegance of Chardonnay.
Winemaking
Crafted from the best first press juices, this wine undergoes fermentation in temperature-controlled stainless-steel tanks. Malolactic fermentation is completed to soften the wine's acidity, followed by 4 months of aging in oak barrels (2nd or 3rd fill) to develop complexity. Aged for a minimum of 7 years on its lees before disgorgement in July 2023, the wine achieves remarkable depth and texture. The dosage is 6.75g/l, classifying it as Brut.
Appearance
A deep golden hue, highlighted by a continuous stream of fine bubbles, reflecting its long lees aging and time in oak.
Nose
A powerful, complex bouquet with dominant notes of mandarin zest, dried fruits such as almonds and hazelnuts, and subtle vanilla from the oak aging. Hints of brioche and toasted nuts add further depth and warmth to the aromatic profile.
Palate
On the palate, the wine is precise and structured, with vibrant acidity balanced by rich flavours of orange, apricot, and dried fruits. The creamy texture from its time on lees is complemented by subtle vanilla and toasted notes. The finish is long and elegant, with a refreshing citrus lift and lingering hints of spice and minerality.
Food pairing
Soft cheeses, aged cheeses roasted poultry, smoked salmon or charcuterie, as an apéritif with light hors d'oeuvres such as canapés or pâté.
Background story
Founded in the 1970s by Roland Boulard, this family estate is now led by the youngest of his three daughters, Nathalie, alongside her husband, Benoit. With a proud legacy of female leadership, their three daughters—Laurine, Julie, and Ludivine—are poised to carry on the tradition.
The estate’s 10 hectares of vineyards in Cormicy and its prestigious Grand Cru plots in Mailly-Champagne are certified with High Environmental Value level 3 (HVE-3) and adhere to Sustainable Viticulture in Champagne. Their commitment to quality and respect for the land is expressed through meticulous care in the vineyard and cellar, resulting in Champagne that reflects the essence of their unique terroir.
