Vineyards

The Alain Pautré estate is located in Lignorelles, on the northwestern edge of the Chablis appellation. The vines, aged between 30 and 40 years, are planted on a calciferous plateau beside a forest, benefiting from a south-facing orientation. This prime location provides optimal sun exposure and contributes to the classic minerality and freshness associated with Chablis wines. Sustainable viticulture practices are employed to preserve the integrity of the terroir.

Winemaking

Monsieur Alain Pautré, a third-generation grower, was renowned for his dedication to producing authentic Chablis wines that reflect their terroir. Since 2005, the estate has been managed by Jean-Marc Brocard, maintaining the estate’s commitment to quality and tradition. Fermentation and maturation are carried out in 100% stainless steel to preserve the freshness, vibrant acidity, and delicate aromas of Chardonnay. No oak is used to ensure the wine’s purity and true expression of the Chablis terroir.

Appearance

Pale lemon with subtle golden highlights, reflecting its evolving maturity.

Nose

The nose is crisp and refreshing, with aromas of citrus fruits such as lemon and grapefruit, complemented by notes of green apple, white flowers, and a touch of wet stone minerality.

Palate

On the palate, the wine is elegant and precise, with flavours of citrus, green apple, and subtle flintiness. The vibrant acidity provides a backbone of freshness, while the wine’s texture and structure give it impressive balance. The finish is long and clean, leaving a lingering impression of saline minerality.

Food pairing

This Chablis pairs beautifully with seafood dishes such as oysters, grilled scallops, or white fish in a light citrus sauce. It also complements creamy goat cheeses and light vegetarian dishes featuring asparagus or artichokes.
