Vineyards
The 2014 Aloxe-Corton Les Fournières is produced from Domaine Tollot-Beaut’s premier cru vineyard in the Côte de Beaune, benefiting from its limestone and clay-rich soils. The vines, averaging 40 years old, are meticulously managed using sustainable practices. This vineyard’s south-eastern exposure ensures optimal sunlight, contributing to the grapes’ balanced ripening.
Winemaking
The 2014 vintage featured a cooler growing season, resulting in wines with freshness and bright acidity. The grapes were hand-picked and carefully sorted to select the best fruit. Fermentation took place in stainless steel tanks with natural yeasts, followed by gentle punch-downs to extract colour and tannins. The wine was aged for 16 months in French oak barrels, 25% of which were new, enhancing the wine’s structure and complexity.
Appearance
Bright ruby red with garnet hues, reflecting its graceful maturity.
Nose
Aromas of red cherry, raspberry, and cranberry dominate, with floral notes of violet and subtle hints of spice and earth.
Palate
This wine is medium-bodied and refined, with flavours of red berries, cranberry, and hints of truffle, complemented by a touch of spice. Fine-grained tannins and refreshing acidity provide balance, leading to a long, mineral-driven finish with hints of oak spice.
Food pairing
Ideal with herb-crusted lamb, roasted chicken, or mushroom-based dishes. Its freshness also pairs well with charcuterie and mild cheeses like Gruyère or Comté.
