Vineyards
The Les Mitans Premier Cru vineyard is located in Volnay, one of Burgundy’s most esteemed villages. Nestled on a mid-slope position with an ideal eastern exposure, the vineyard benefits from well-drained, limestone-rich soils that impart finesse and complexity to the wines. The vines, which average over 50 years in age, are cultivated biodynamically to ensure the health of the vineyard and the authentic expression of its unique terroir.
Winemaking
The 2016 vintage presented challenges with frost early in the season but resulted in low yields of intensely concentrated fruit. Grapes were hand-harvested and meticulously sorted before undergoing fermentation with indigenous yeasts. The wine was aged for 12-14 months in French oak barrels, 20-25% of which were new, enhancing its structure and elegance without overwhelming the purity of the fruit.
Appearance
Brilliant ruby red with garnet highlights, hinting at its elegance and potential for ageing.
Nose
The nose is delicate and refined, offering aromas of red cherries, wild strawberries, and rose petals, interwoven with hints of forest floor, baking spices, and a touch of smoke.
Palate
Medium-bodied with a silky texture and fine-grained tannins. Savoury notes of truffle, earth, and a subtle minerality complement flavours of fresh red berries. A vibrant acidity balances the richness, leading to a long, elegant finish.
Food pairing
This wine pairs beautifully with roasted poultry, duck breast, or mushroom-based dishes such as porcini risotto. It also complements soft cheeses like Brie de Meaux or Époisses.
Background story
Domaine de Montille, established in the 18th century, is renowned for producing some of Burgundy’s most elegant and terroir-driven wines. Now led by Étienne de Montille, the estate has embraced biodynamic viticulture and low-intervention winemaking to highlight the unique characteristics of each vineyard.
