Vineyards
Domaine du Moulin d'Éole's Chiroubles 2015 originates from vineyards located in one of the highest appellations in Beaujolais. Situated at altitudes ranging between 300 and 450 metres, the vineyards benefit from a cool climate and granite-rich soils, which impart a distinctive freshness and minerality to the wine. The old Gamay vines, some over 50 years old, are cultivated using sustainable farming practices, ensuring the preservation of the unique terroir.
Winemaking
The grapes are hand-harvested to maintain their integrity and preserve the vineyard’s character. After meticulous sorting, fermentation occurs in temperature-controlled stainless steel tanks using semi-carbonic maceration, a traditional method in Beaujolais that enhances the fruit-forward profile. The wine is aged in a combination of concrete vats and neutral oak barrels for several months, adding depth and complexity while preserving the purity of the fruit.

Deep ruby with garnet reflections, indicating its maturity.
Nose
The nose reveals an elegant bouquet of ripe red fruits such as cherry and raspberry, layered with notes of dried flowers, subtle spice, and a hint of earthiness, characteristic of aged Beaujolais.
Palate
Medium-bodied with softened tannins and well-integrated acidity, this wine offers flavours of stewed red berries, plum, and a touch of dried herbs. The mid-palate shows evolved complexity, with hints of leather, truffle, and a lingering mineral finish.
Food pairing
This mature Chiroubles pairs beautifully with roasted game birds, duck confit, or grilled lamb. It also complements earthy vegetarian dishes like wild mushroom tart or ratatouille.
