Origin and production
Domaine Dupont's VSOP is made in the Pays d'Auge from orchards on clay and Oxfordian marl soils. The fruit blend is approximately 80% bittersweet apples and 20% acidic apples, combining depth, tannin and freshness before fermentation into dry cider.
The cider is double-distilled in traditional pot stills, then the spirit is matured for five years in oak barrels, 25% of them new. This measured proportion of new wood adds spice and structure while allowing the apple character to remain vivid.
Tasting notes
Appearance
Clear golden amber with bright copper highlights.
Nose
Fresh apple and pear lead into caramelised orchard fruit, vanilla, toasted oak and a touch of warm spice.
Palate
Round and smooth, with ripe apple, baked pear and gentle caramel supported by oak, liquorice and peppery warmth. The finish is balanced, persistent and distinctly fruit-led.
Serving suggestions
Serve neat at room temperature as a digestif, over a single large ice cube, or in a classic Normandy coffee. It also works beautifully in an apple brandy Old Fashioned and can be used sparingly to flambé tarte Tatin or caramelised apples.
Background story
Domaine Dupont is a specialist cider and Calvados producer in the heart of the Pays d'Auge. The family combines Normandy's traditional orchard and distillation knowledge with techniques refined through study in Cognac, giving its spirits an unusually polished texture.
VSOP stands for Very Superior Old Pale and, here, signifies a five-year maturation rather than a generic young apple brandy. The balance of bittersweet and acidic fruit, double distillation and carefully judged new oak creates a Calvados with enough freshness for cocktails and sufficient depth for contemplative after-dinner service.
