Vineyards and winemaking
The Sauvignon Blanc is grown on gneiss-based soils around Bouaye. The nearby Lac de Grand-Lieu, Loire and Atlantic support even ripening and vivid acidity, while the stony ground contributes a clean mineral edge to the variety's exuberant fruit.
Low-temperature fermentation captures the grape's aromatic intensity, followed by four months in stainless steel to maintain precision. No sulphites are added, and the absence of oak keeps the passionfruit, citrus and floral character direct and energetic.

Appearance
Pale lemon yellow with bright green reflections.
Nose
Passionfruit and lychee lead into pink grapefruit, elderflower and freshly cut herbs.
Palate
Punchy and expressive, with tropical fruit, lime and gooseberry carried by incisive acidity. A subtle stony note steadies the fruit, leaving a dry, brisk and mouth-watering finish.
Food pairing
Pair with asparagus and goat's curd, sea-bass ceviche, Thai green vegetable curry, or grilled prawns with lime and coriander. Its intensity also works well with smoked mackerel pâté.
Background story
Domaine du Haut Bourg is a four-generation family estate in Bouaye, south of Nantes, now run by brothers Hervé and Nicolas Choblet. The vineyards lie between the Lac de Grand-Lieu, the Loire and the Atlantic, a setting that moderates temperatures and supports fresh, evenly ripened fruit.
When Sommelier's Choice first tasted this cuvée, its power and precision were so compelling that we purchased the entire production. That early commitment remains an important part of the relationship with the Choblet family, and the 2025 continues the wine's distinctive combination of aromatic force, freshness and value.
