Vineyards and winemaking
Rustico is made from Glera grown on the middle-elevation hills of the Valdobbiadene Prosecco Superiore DOCG area. The varied soils range from shallow, calcareous ground on the steeper slopes to deeper fluvio-glacial deposits with clay at depth, providing the wine with freshness, delicacy and a clear sense of place.
The must is cooled and fermented in temperature-controlled stainless steel before a second fermentation in pressurised tanks using the Charmat method. Classified as Brut, Rustico is made to retain Glera’s bright fruit and floral perfume while delivering a clean, finely sparkling finish.

Appearance
Brilliant pale straw, animated by a fine and lively mousse.
Nose
Williams pear and crisp apple are lifted by white blossom, lemon zest and a faint mineral note.
Palate
Light-footed and precise, with pear, green apple and citrus carried by soft bubbles. A subtle almond note appears towards the close, leaving the finish dry, delicate and refreshing.
Food pairing
Excellent as an aperitif or with smoked-salmon blinis, courgette fritters, dressed crab, young goat’s cheese or vegetable tempura. Its uncomplicated freshness also makes it a graceful choice for canapés and celebratory gatherings.
Background story
Rustico has been part of Nino Franco’s story since the 1970s. Originally made as a Prosecco with its lees, it became a Charmat-method sparkling wine in 1979 and went on to introduce the house’s quality-led approach to drinkers around the world.
Tasting Rustico in 1999 was one of the inspirations behind the establishment of Sommelier’s Choice. It subsequently helped redefine expectations of Prosecco in the UK, earning its place as a pouring wine in fine-dining restaurants through its quality, consistency and versatility.
