Origin and production

Camut Privilège is made from estate-grown Pays d'Auge apples at Domaine de Semainville. The family's high-stem orchards contain numerous historic cider varieties, harvested at full ripeness to provide the layered sweetness, bitterness and acidity essential to fine Calvados.

The cider ferments slowly in wood for 10–11 months and is then twice distilled in copper pot stills fired by wood. Privilège is assembled from mature eaux-de-vie aged for approximately 15–18 years in seasoned oak, with ample airspace in the casks encouraging gradual oxidation and natural concentration.

Tasting notes

Appearance

Deep, luminous amber with burnished copper tones.

Nose

Baked apple and melted toffee are joined by honey, oatmeal biscuit, roasted nuts and a touch of autumn spice.

Palate

Velvety and expansive, with caramelised apple, nutmeg and almond layered over an earthy, gently smoky foundation. The fruit remains clear despite the long ageing, and the finish is warm, floral-edged and exceptionally persistent.

Serving suggestions

Serve neat after dinner in a tulip glass. It is excellent with tarte Tatin and crème fraîche, an aged Livarot, or roast hazelnuts; its breadth also makes it an absorbing alternative to mature whisky or Cognac.

Background story

The Camut family has cultivated apples and distilled at Domaine de Semainville since the nineteenth century. Today the estate remains known for complete control of its fruit, deliberately slow cider fermentation and traditional double distillation over wood fires.

Privilège is the blend that established Camut's reputation among many serious Calvados drinkers. Its extended ageing deepens the orchard fruit without sacrificing purity, creating a spirit that feels both unmistakably rustic in origin and remarkably refined in the glass.
