Origin and production
Maxime Trijol VSOP Classic is assembled from Cognac eaux-de-vie based principally on Ugni Blanc. The family oversees vineyards, distillation and maturation, using traditional double distillation in copper pot stills before the spirit enters French oak.
The youngest component meets the VSOP ageing requirement, with time in oak softening the spirit and building harmony between fruit, flowers and spice. Careful blending preserves a generous, approachable character rather than allowing wood to dominate.
Tasting notes
Appearance
Warm antique gold with clear amber highlights.
Nose
Overripe peach, apricot and orange peel are joined by sandalwood, pepper and a light wisp of smoke, with softer floral notes beneath the spice.
Palate
Supple and balanced, with marmalade and mixed citrus peel unfolding into honey, vanilla and gentle oak tannin. The finish is long and mellow, carrying warm spice and a final lift of flowers and fruit.
Serving suggestions
Enjoy neat, with a small splash of water, or over one large cube of ice. Its citrus and spice also suit a Sidecar or an elevated highball, while tarte tatin and toasted almonds make unfussy accompaniments.
Background story
The Trijol family began distilling in 1859 and remains an independent, multi-generational Cognac producer based in Saint-Martial-sur-Né. Control from vineyard to still and cellar gives the house unusual continuity over the entire production process.
VSOP Classic is designed as a versatile introduction to that house character: generous fruit, clear floral notes and oak that supports rather than overwhelms. Its balance makes it equally at ease as a quiet after-dinner pour or the foundation of a spirit-forward cocktail.
