Vineyards and winemaking
This rosé is made from Grolleau Noir grown near the family's Muscadet vineyards in Bouaye. Water on three sides of the wider area—the Lac de Grand-Lieu, Loire and Atlantic—helps temper the growing season and retain the variety's naturally bright fruit.
Approximately ten hours of skin contact gives the wine its delicate colour before gentle pressing. The juice settles cool for around 48 hours, then ferments in temperature-controlled vats; malolactic fermentation is prevented to preserve crisp acidity.
Tasting notes
Appearance
Clear pale pink with a soft salmon glint.
Nose
Gooseberry, wild strawberry and redcurrant are joined by rose petal and a fresh citrus note.
Palate
Light, brisk and fruit-led, with crunchy red berries and tangy gooseberry over a fine mineral base. The finish is dry, clean and notably refreshing.
Food pairing
Ideal for a picnic table with glazed ham, poached salmon, prawn tacos, or a watermelon, cucumber and feta salad. Serve well chilled and enjoy while its delicate fruit is at its brightest.
Background story
Domaine du Haut Bourg is a four-generation family estate in Bouaye, south of Nantes, now run by brothers Hervé and Nicolas Choblet. The vineyards lie between the Lac de Grand-Lieu, the Loire and the Atlantic, a setting that moderates temperatures and supports fresh, evenly ripened fruit.
Grolleau Noir is an important traditional Loire variety, valued here for its naturally lively, gently perfumed rosé. The wine broadens the domaine's range beyond its cellar-aged Muscadets while retaining the same preference for freshness and straightforward regional character.
