Vineyards and winemaking
This Chardonnay is drawn from vineyards on Chablis' Kimmeridgian limestone, where layers of clay and fossil-rich marl provide the mineral definition central to the appellation. Careful farming and controlled yields help build texture without compromising the wine's natural freshness.
The grapes are harvested by hand and fermented with indigenous yeasts. Stainless-steel vinification and maturation preserve the clarity of the 2022 fruit, leaving the citrus, green apple and saline character free from an overt oak signature.

Appearance
Pale lemon gold with bright green reflections.
Nose
Green apple, lemon zest and white flowers are underlined by oyster shell, chalk and a faint iodine note.
Palate
Fresh and finely rounded, with citrus and crisp orchard fruit carried by incisive acidity. A lightly creamy texture gives breadth before a long finish of wet stone, lemon peel and salinity.
Food pairing
Pair with native oysters, steamed mussels with cider, grilled sea bass and sorrel, or a twice-baked goat's-cheese soufflé. Serve at 10–12°C rather than straight from an ice bucket.
Background story
Domaine Garnier & Fils is based at Ligny-le-Châtel, the northernmost winegrowing commune of Chablis. Although the family had owned vines for generations, it began bottling its own wines in 1996; brothers Xavier and Jérôme Garnier subsequently expanded the estate, with Jérôme leading the vineyard work and Xavier the cellar.
The brothers farm between the left and right banks of the Serein and favour spontaneous fermentation and patient maturation suited to each site. This village Chablis is the clearest introduction to their approach: textured and ripe, but firmly anchored by the cool, saline precision of northern Burgundy.
