Vineyards and winemaking
The Cabernet varieties are grown around Bouaye, where the western Loire's Atlantic influence helps preserve acidity and aromatic definition. Mica-schist, granite, sand and sedimentary elements across the estate's soils contribute freshness and a quiet earthy character.
The grapes are harvested at full ripeness and fermented at controlled temperature, with measured extraction to keep the tannins supple. Maturation in stainless steel protects the bright fruit and allows this Loire Cabernet to remain approachable and precise.

Medium-bodied and fresh, with juicy red fruit, fine-grained tannins and the savoury lift typical of Loire Cabernet. A touch of pepper and earth follows into a clean, gently grippy finish.

Serve slightly cool with gammon steak and mustard, lamb sausages with onion gravy, roast peppers stuffed with lentils, or a Cheddar-topped cottage pie. Its freshness also suits cold roast beef with watercress.
Background story
Domaine du Haut Bourg is a four-generation family estate in Bouaye, south of Nantes, now run by brothers Hervé and Nicolas Choblet. The vineyards lie between the Lac de Grand-Lieu, the Loire and the Atlantic, a setting that moderates temperatures and supports fresh, evenly ripened fruit.
Better known for Muscadet, the Choblets also work with local red varieties to show the wider potential of their site. This 2023 favours clarity and drinkability over heavy extraction, offering a distinctly Loire expression of Cabernet for the everyday table.
