Origin and production

Grappa di Chardonnay is distilled from fresh Chardonnay pomace, handled quickly after pressing to protect its fine fruit and floral aromas. The grape's relatively supple character lends itself to a polished, accessible expression of clear grappa.

The pomace is distilled in small batches through traditional steam stills operated manually by the Tosolini family. Bottled at 40% ABV without wood ageing, the spirit retains a bright, transparent character.

Appearance

Crystal clear, bright and limpid.

Nose

Fresh and finely scented, with hawthorn, apple skin and white flowers over a gentle suggestion of lemon peel and blanched almond.

Palate

Smooth at first, becoming drier and more focused as it develops. Orchard fruit and citrus are followed by almond skin and a lightly herbal note, with controlled warmth and a clean, persistent close.

Serving suggestions

Pour at 16–18°C into a tulip-shaped glass and sip slowly after dinner. It is particularly good with a plain almond cake, poached pear or mature Comté, whose nutty savouriness echoes the grappa's finish.

Background story

Bepi Tosolini established the Friulian distillery in 1943 with the ambition of making grappa of greater finesse and clarity. Fresh pomace, pure water and close control of each distillation have remained fundamental to the family's approach.

Chardonnay offers a naturally graceful counterpoint to the more forceful character sometimes associated with grappa. Kept clear and unaged, this bottling places the emphasis on the grape's gentle fruit and the precision of the distillation itself.
