Origin and production

This varietal grappa is produced in Friuli from fresh Pinot Grigio pomace, selected and distilled soon after the grapes have been pressed. The aim is to retain the subtle orchard-fruit and floral character held in the skins.

Small batches are distilled in traditional steam stills operated by hand, following Tosolini's artisanal method. Bottled clear at 40% ABV, the grappa is defined by purity, delicacy and a crisp, dry profile.

Appearance

Brilliant and colourless, with exceptional clarity.

Nose

Delicate aromas of pear skin, apple blossom and meadow hay are joined by a fine note of dried herbs and white pepper.

Palate

Clean and slender, with crisp orchard fruit giving way to fennel seed, grape skin and a gentle peppery warmth. The finish is dry, precise and quietly aromatic.

Serving suggestions

Serve at 16–18°C in a small tulip glass, allowing a few moments for the aromas to open. Its restrained character works well after a light meal, alongside apple tart, fresh walnuts or a mild, nutty cheese.

Background story

Pinot Grigio is closely associated with Friuli, where the grape can show considerably more nuance than its familiar international image suggests. Distilling its fresh pomace offers another perspective on the variety, concentrating its quieter floral and fruit tones.

The Tosolini family has worked with regional grape varieties since Bepi founded the distillery in 1943. Manually controlled steam distillation remains central to the house style, allowing each batch to be judged by aroma rather than treated as a purely mechanical process.
