Vineyards and production

Josep Ferret Guasch Agridulce is produced in Font-rubí, in the heart of Catalonia's Penedès region. It begins with Cava wine vinegar, grape must and fruit syrup, bringing together clean vinous acidity and natural sweetness in a condiment that is fresher and more lifted than a conventional balsamic-style vinegar.

The blend is aged for four years, allowing its sweet and sour elements to knit together while developing greater depth and concentration. Extended maturation rounds the edges of the vinegar without removing the bright acidity that makes it so versatile at the table.

Tasting notes

Appearance

Deep amber with mahogany highlights and a glossy, gently viscous appearance.

Nose

Ripe grape, dried fig and caramelised fruit are balanced by a clean wine-vinegar lift, with subtle notes of raisin and warm spice adding complexity.

Palate

Rounded and concentrated, opening with the sweetness of grape must before lively acidity restores freshness. Dried fruit and light caramel notes develop through a persistent sweet-sour finish, giving richness without the heaviness of a dense balsamic glaze.

Food pairing

Drizzle sparingly over oysters, grilled prawns, scallops or roast tomatoes, or whisk into vinaigrettes and pan sauces. It also brings useful contrast to duck, pork, pâté and mature cheese; for something simpler, try a few drops with strawberries or vanilla ice cream.

Background story

Josep Maria Ferret Guasch established the family winery in 1997 with his wife and son, building on a lifetime of experience in the wine trade. Based in a region renowned for sparkling wine, the estate produces Cava, still wines and vinegars with an emphasis on patient craftsmanship and a recognisably Penedès identity.

Using Cava as the foundation gives this Agridulce its distinctive balance. The wine's naturally brisk acidity provides the backbone, while grape must and fruit syrup contribute breadth and gentle sweetness; four years of ageing then brings the elements together into an elegant, chef-friendly finishing vinegar.
